Nothing gets lost, everything turns. By the end of the fall, the two local eggplants “Bud Shawki” and “El Homsi” have a second life. Farcies according to a recipe transmitted from generation to generation, they are carefully rowed in canned for long winter months. Traditionally led by rural women, the manufacture of "makdous" plays an important role in their emancipation.
Cultivated in the Lebanese region of Qaa, on a fertile soil enjoying hot and dry summers, our eggplants are considered the best in the country. They benefit from an ideal climate, conducive to the full blooming of their flavours.
Savour them, for example, with a slice of bread and tomato slices, or put them on a green salad for an acidified touch. Guests of choice at the mezze, aperitif or brunch to change your taste buds!
